PB&J Green Smoothie

The mighty smoothie has never been more popular than it has been the last few years. Between berry bowls and green smoothie detoxes and acai mixtures, it’s everywhere. You can’t get on Instagram without seeing a Californian post their daily dose of blended fruits (not hating, just jealous). Man cannot live on them alone, but he can sure start his day with one.

And truly, when I start the day off with a smoothie, things just feel better. I get that boost of energy from the sugar, and I ride it for the rest of the day. It’s a light breakfast that makes me feel like dancing, even when I didn’t get enough sleep or I’m dreading school. Beyond that, it also tastes good. The tartness of the strawberries, the thick peanut butter playing nice with the smooth banana. It’s perfection in a glass, which is probably why 75% of my weekday breakfasts involve one.

Now, technically you don’t need a recipe for a smoothie, so you can get by without one. It’s just fruit tossed into a blender, right? That’s correct, but as someone who has wound up drinking plenty of lackluster smoothies in her life, I can tell you that there is a certain quality that I’m looking for. For that quality, you need to know what you’re doing.

This recipe is the most common one that I make, because it uses just a few ingredients and it comes out tasting like a peanut butter and jelly sandwich in smoothie form. I got the inspiration from a local cafe where I regularly dropped $11 on this smoothie bowl that I could have made for practically nothing at home. Let’s just say that this recipe saved my wallet.

Here it is, the smoothie that will wake you up faster than any cup of coffee and have you feeling good all day.

Serves 2

Ingredients

1 Cup Spinach

1/2 Cup Almond Milk

1 Banana

1/4 Cup Greek Yogurt

1 1/2 Cups Frozen Strawberries

2 Tablespoons Creamy Peanut Butter

Directions

Add spinach and almond milk to blender, blend until smooth. Toss in banana, yogurt, and strawberries, and blend until smooth. Add peanut butter, blend until smooth.

Can be stored up to two days in a closed container.

This recipe will get you up and ready to kick the day’s ass every morning. It’s worked wonders for my mood and for the way that I feel, plus it helps that it feels like I’m getting a dessert in the process. Fresh fruit is a real treat in the middle of winter up here in Alaska, so I try to savor it as often as possible.
